Crispy Panko Chicken Tenders

Don't give your family those "chicken part nuggets" - give them some homemade crispy chicken tenders! These are soooo flavorful. Crispy on the outside, tender & juicy on the inside. Your kids (and spouses) will never want any other breaded chicken that you serve them!

Ingredients
2-3 lbs of Chicken Tenders

1/2 quart of buttermilk
1 tsp paprika
1/2 tsp onion powder
3 cloves minced garlic
1 tbsp whole grain dijon mustard

1 cup flour
1 tbsp kosher salt
1 tsp black pepper

2 eggs
1/2 cup milk

1 bag panko (Japanese) bread crumbs

about 1-2 cups of olive oil (1/2" in your skillet)

Mix the buttermilk, paprika, onion powder, garlic & dijon together & pour over chicken tenders in a ziplock bag. Let it marinate for at least 2 hours...I let them sit all day long.



When you are ready to cook, prepare your station. Whisk together the eggs and milk. Mix the flour, salt & pepper together. Put the panko in a shallow dish.



Get your oil in a skillet on medium high heat. Make sure your oil is hot before adding the chicken.

You will take out each tender, drain the marinade, coat with the flour, dunk in the egg and coat with the breadcrumbs and give each a dip in the hot oil.

Let them cook for about 2-3 minutes per side. You don't want to flip them more than once because the breading may fall off. They will be golden brown when they are ready to flip.


Now set up a draining station with paper towel coated paper plates. The tenders won't absorb the oil if your oil is nice and hot. Any excess oil will drain on the paper towels. Keep doing the process until all the chicken is done.

I made some quick homemade stovetop mac & cheese last night for Jake...so we had that as a side dish tonight. Oh. My. Goodness. These are FAAAANTASTIC!!!!!

Garnish with some BBQ sauce....frankly, they are just fabulous on their own, without any sauce.

Juicy, crispy, tender, all natural, homemade & scrumptious. Winner, winner...chicken dinner!
The leftovers are great crisped up in the toaster oven the next day. We'll be enjoying some great chicken sammies tomorrow! Enjoy!
