Grilled Red Potatoes with Garlic & Fresh Herbs

These taters ROCK! Potatoes are cheap. You can really use them in a ton of different ways, but since the weather is gorgeous today...we are grilling. I love making packets of food for the grill. This uses that technique.



Ingredients
about 3-4 cups of red potatoes - diced in about 1/2" cubes

a few tbsp of olive oil

3 cloves of garlic, minced

Any fresh herbs you have on hand - my chives are growing already, so I'll be using chives. I also have some fresh basil & parsley from earlier in the week so I'll be using those too. Rosemary is fantastic as well. Really, any fresh herbs that you have will be fantastic on these.

About 1 tbsp kosher salt & 1/2 tsp of freshly ground black pepper


Lay your potatoes out in a baking dish or cookie sheet. Drizzle with olive oil until they are well coated, but not swimming in the oil.


Sprinkle with salt, pepper & garlic & toss well. Double up 2 large pieces of foil and make a packet for the potatoes. Make sure they are sealed up well.

 Toss on the grill and let them do their thing for about 10-15 minutes...depending on the size of your packets and the heat of your grill. You may need to peek in the packet to make sure that the potatoes are cooked through. In the mean time, dice up your fresh herbs. Mmmmm. They smell fantastic.


When they are tender, remove from the packet and place back in your dish/cookie sheet. Sprinkle with your fresh herbs and toss to combine.

Serve with whatever else you are grilling that day. They are really the perfect summer side dish to anything!
