Oven Roasted Tomatoes

These are a really flavorful addition to any meal and are really great on their own with just a little of basil or feta on them. Delicious on pizza, pasta, fish, chicken...just about everything!

4-5 Plum Tomatoes, quartered
a few cloves of whole garlic, peeled
a few tbsp of olive oil

Preheat the oven to 300 degrees.

Lay the quartered tomatoes out on a baking sheet. Scatter the garlic cloves amongst the tomatoes. Season each tomato wedge with a little salt & pepper. Drizzle each one with a bit of olive oil.

Pop into the oven for 2-3 hours (depending on the size of your tomatoes) and they are done!

So simple. So fantastic.  Great concentrated flavors and a delicious roasted taste. Mmmmmm.
