Vegan Marshmallows DO exist!

My hubby was doing a bit of work at a company in Lombard, IL that makes VEGAN MARSHMALLOWS!   I was lucky enough to get a bag brought home to me :) They are fantastic! So light, sweet and airy. I just had to let all my vegetarian and vegan friends know about these!

Being Melissa's vegan friend she shared a few bags of marshmallows to try out. I was more than excited to have the option in my diet again since I had not had a marshmallow or a Rice Krispie Treat in about 20 years. I was shocked at how much they tasted like the real thing. I made the Rice Krispie Treats using the super fast and easy recipe below. I used organic puffed rice cereal instead of the standard R.K cereal which has high fructose corn syrup and some other not so healthy ingredients in it. I found the cereal at Dominick's for $1.69!

They turned out super yummy and even my non-vegan/vegetarian boyfriend!

1 package Dandies
3 tbs Earth Balance Buttery Spread
6 cups cereal
Over low heat, melt Earth Balance with Dandies until fully melted, Add in cereal while mixture is still warm, Incorporate thoroughly, Press mixture into 9x9 glass baking dish
Chill, cut, serve, devour!
