Chinese Style Potatoes

I had a request for a good potato recipe for a dinner party...so I gave her this one. It's a great Chinese-style potato recipe from my friend who's been living in China...this is straight from her Ayi. It seems so simple, but it's really interesting and delicious. Great at room temperature also. Make sure you use her "optional" ingredients - garlic, ginger & green onions. I make it all the time. 




Potatoes, Chinese Style

**Main ingredients**

Chop into 1/4 inch slices:

2 potatoes

1 large carrot

Chop in large chunks:

1 pablano pepper

1 sweet red pepper

1 red onion

kosher salt to taste (it takes a few tablespoons)

chicken broth or water



**optional ingredients**

2 cloves garlic, minced

1 inch ginger, minced

2-3 chopped green onions



Sautee main ingredients in a tablespoon of oil until heated through. Add 1/4 cup of chicken broth and cover. Allow to simmer until the potatoes and carrots are cooked through, but not mushy, stirring occasionally. (You may have to add extra water/broth.)



Stir in optional ingredients, heat through and serve.
